Mr. McGregor had to clean out his garden before the first Frost and now he has an overabundance of autumn vegetables. An easy recipe readily adaptable for other vegetables.

Ingredients
10 servings
2 stalksbroccoli
peeled & chunked into bite-size pieces
2bell peppers
red, yellow or green a variety is nice
6 stalkscelery
de-stringed and minced
4carrots
large, sliced into bite-size pieces
1 headcauliflower
diced
1 headcabbage
halved and sliced into lengthwise pieces, and then cut into pieces against the grain of the ribs
3yellow onions
large, diced
2potatoes
large, peeled and diced into bite-size pieces
32 ozbeef stock
32 ozwater
2 tablespoonsvegetable bouillon powder
Instructions
Step 1
Cut the vegetables except for the potatoes. Place the cut vegetables into a large Soup pot.
Step 2
Add 32 oz (4 cups) of beef stock
Step 3
Add the 2 tablespoons of Better than Bouillon into the four cups of water and stir well. Pour into the soup pot.
Step 4
DO NOT ADD SALT! The Better than Bouillon or regular bouillon is very salty.
Step 5
Place the soup pot on the stove burner and set to medium heat.
Step 6
Cover the pot and bring to a boil.
Step 7
Turn to medium-low and cook covered for 1 hour.
Step 8
Place the peeled and diced potatoes into the pot and return the cover for 15 minutes.
Step 9
Turn off the pot but leave on the burner for another 15 minutes with the cover on.
