2carrots

100gdouble cream
2garlic cloves
3 sprigsrosemary
3 sprigsthyme
120ggoat cheese
350mlvegetable broth
add more if you like it soupier

Step 1
Preheat oven to o 200C (fan)
Step 2
In an ovenproof dish combine roughly chopped sweet potato and carrots, quartered shallot, salt, pepper, nutmeg, ginger, olive oil and double cream. Give it a good mix. Then cut off the bottom of the garlic cloves and place them on top, add rosemary and thyme sprigs and cover with the lid or aluminium foil. Roast in the preheated oven for about 35-40 minutes, or until veggies are tender.
Step 3
When ready, discard the sprigs, squeeze the garlic add cheese and broth. ( if you roasted veggies in a shallow dish, then at this point transfer them to a deep saucepan. Puree the soup using an immersion blender.
Step 4
Before serving garnish with double cream, thyme leaves, and pine nuts.
