Rajma / Mothi Daal / Pothi / Surkh Lobia or Red Kidney Beans is a staple dish in Kashmir. It is a delicious, rich and creamy bean curry served with white rice or paratha. It is super healthy, simple to make and loved by all. It is also one of the dishes which even taste better the next day so it is a perfect dish for leftovers.

Ingredients

450gred kidney beans
(For a dutch oven soak overnight in 2L Water with 1Tbsp Salt and If you would like to use Pressure Cooker for faster results, just give Rajma/Red Kidney Beans a good wash and follow the recipe)
¼ cuponion
1 "ginger
piece, we will use half for boiling rajma and half when we start making the gravy
5 bulbsgarlic
fresh coriander
keep the stalks as well
3green chillies
or to taste
2tomatoes
medium, crushed or diced
1 cupoil
1 tspwhole cumin seeds
1 tspcumin powder
we will use half for boiling rajma and half at the end
1 tspcoriander powder
5whole chillies
round
1 ½ tspred chilli powder
or to taste
½ tspkashmiri mirch powder
this is merely for adding some color to the gravy, you can also replace it with paprika if you can not find it
1 ½ tspsalt
or to taste
½ tspturmeric powder
5cloves
or to taste
1black cardamom
cinnamon stick
small piece
water
as needed, we will need water to boil rajma and to make gravy
