Some oysters are destined for the fryer! Usually the bigger oysters with lower salinity and super plump meats work perfectly. Deep frying works well for oysters past their raw-eating prime. I used Misty Point oysters from the Eastern Shore of Virginia here, which worked out really well.
Fried Oysters
Makes ~18 oysters
INGREDIENTS
For the oyster:
1 cup panko breadcrumbs
1/2 Tbsp paprika (optional)
1/2 Tbsp cayenne (optional)
1 tsp cornstarch
1 pinch Kosher salt
1 egg, beaten
2-3 cups Canola or avocado oil
For the dipping sauce:
1/4 cup mayonnaise
1 Tbsp Sriracha sauce
1-2 tsp lime juice, freshly squeezed
