Instructions

Step 1
In a large skillet cook ground beef over medium-high heat until cooked through, breaking up with a wooden spoon. Add the onion, jalapeño, and garlic and cook for one to two minutes.
Step 2
Add taco seasoning, tomatoes, chicken broth, and cauliflower rice to the skillet. Stir well and simmer medium-low heat for 5-7 minutes, or until extra liquid is absorbed.
Step 3
Season with salt and pepper to taste.
Step 4
Sprinkle shredded cheese on top, cover and simmer until cheese is melted. Garnish with fresh chopped cilantro and any desired toppings.
