Step 1
Dice up chicken and set aside.
Step 2
To a pan over medium heat add oil. Once oil is hot add in chicken and taco seasoning.
Step 3
Once chicken is well coated and cooked through add in rotel, black beans, and chicken broth.
Step 4
Once it comes to a boil stir in the rice, switch heat to low, cover, and cook for 7 minutes.
Step 5
Stir in queso and top with shredded cheese. Put cover back on until cheese melts.
Step 6
Serve with your favorite toppings!
