Tomato pesto
Step 1
Blend the tomato pesto ingredients together in a blender or food processor. Set aside.
Sauce
Step 2
Finely chop celery, onion and carrot. Sauté them in olive oil. Add garlic, and then pour in the halved cherry tomatoes.
Step 3
Finally, pour in the pesto, tomato sauce, balsamic vinegar and lentils. Salt and pepper to taste.
Step 4
Serve on pasta with some basil and Parmesan on top.
