rinsed and drained
1green bell pepper
seeded and diced
½ cupvegetable stock
or chicken
1 x 15 ouncecan tomato sauce
2 tablespoonsreduced-sodium worcestershire sauce
2 tablespoons100 % pure maple syrup
1 tablespoonred wine vinegar
plus 1 teaspoon
½ teaspoonpaprika
½ teaspoonchili powder
½ teaspoongarlic powder
1 teaspoondried onion
minced
½ teaspoonfine sea salt
½ teaspoonground black pepper

Instructions
Step 1
In an electric pressure cooker, add-in this order-the red onion, lentils, bell pepper, stock, tomato sauce, Worcester- shire, maple syrup, vinegar, paprika, chili powder, garlic powder, dried onion, sea salt, and black pepper.
Step 2
Do not stir.
Step 3
Place the lid on the cooker and make sure the vent valve is in the SEALING position.
Step 4
Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRES- SURE, and use the +/- buttons until the display reads 15 minutes.
Step 5
When the cooker beeps to let you know it's finished, let it naturally release pressure until the display reads

Switch the vent valve from the SEALING to the VENTING position.
Step 8
Use caution while the steam escapes-it's hot.
Step 9
Stir well and serve the sloppy joe mixture sandwiched between the buns.
