Instructions
Step 1
Cook & shred the chicken
Sautee 1 diced onion
Step 2
Make the enchilada sauce: Whisk 2T flour and 2T olive oil together over medium heat (to remove flour flavor) for about 1min
- Add in 4T chili powder, 1tsp onion powder, ½ tsp garlic powder & salt, ¼ tsp oregano & cumin and whisk 30sec
- Slowly add in 2 ¼c chicken/veggie broth and whisk for no lumps
- Add in 2T tomato paste
-Bring to a simmer and then remove from heat

Combine chicken, 1/2c Enchilada Sauce, 1 brown onion (sautéed), salt & pepper and include 1c shredded cheese (not combined in mixture)
Step 4
Warm 8 tortillas in microwave (30sec each side)
Step 5
Assemble enchilada filling and cheese inside tortilla, roll to close and place in dish seam side down
Step 6
Pour remaining enchilada sauce over tortillas and sprinkle with 2c cheese
Step 7
Cook for 20min at 350F (covered)
