Apple Upside Down Sticky Toffee Pudding

Ingredients

The Cake
1 stickbutter
softened
1 cupflour
1 cupbrown sugar
1 tspcinnamon
1 tspginger powder
1 Tbsbaking soda
1egg
1egg yolk
1 heaping tablespoonmolasses
8 ozdates
1 cupwater
1apple
thinly sliced
salt
The Toffee Sauce
Instructions
The Toffee Sauce
Step 1
Make the toffee sauce first by combining the stick of butter and brown sugar over low heat.
Step 2
Once melted and combined, add in heavy cream.
Step 3
Once boiling rapidly, pull off heat, add vanilla, and let cool
The Cake

Finely peel and slice one apple; set aside
Step 5
Pit and finely chop the dates
Step 6
Pour 1 cup boiling water over the dates, add baking soda, cover and let soften for at least 5 minutes
Step 7
Mix together softened butter and brown sugar until it lightens in color
Step 8
Add in egg and egg yolk one at a time, stirring after each addition
Step 9
Add dates to this mixture, adding in the extra water
Step 10
Add molasses and stir until everything is combined. It’ll be pretty loose at this point

Then add dry ingredients flour, ground ginger, salt and cinnamon and stir until just combined
Step 12
Layer an 8inch round pan by putting parchment paper at the bottom, greasing the sides, and pouring in 2/3 of the toffee sauce

Add the apple in a design of your choosing on top of the toffee sauce
Step 14
Pour in the cake batter. It’ll be pretty thick and the toffee sauce will be rising up, so slowly push the cake batter to the edges trying to not mix with the toffee sauce

Bake at 350 for 35 minutes, or until a knife comes out with minor crumbs

While hot in the pan, poke small holes with a toothpick and pour the rest of the toffee sauce over it
Step 17
Let it sit for 5 minutes before flipping it over

Serve warm and enjoy! (Maybe with some ice cream if you’re feeling crazy)
