Instructions

Step 1
Heat oil in 6 quart pot over high heat. Add onions. Cook for 10 minutes, stirring occasionally, until browned. Add flour; mix well. Add onion soup mix and stir until thoroughly distributed. Add boiling water and bay leaf. Bring to a boil and cook for 10 minutes.
Step 2
Add red wine, return to a boil, and cook 5 minutes. Lower the heat, cover, and simmer for an additional 10-15 minutes. Remove bay leaf.
Step 3
While soup is cooking, cut baugette into 8 slices and toast in oven for 5 minutes.
Step 4
Ladle the soup into ovenproof bowls. Top each with 2 pieces toasted baguette and spinkle with grated cheese. Transfer the bowls to a cookie sheet and broil in oven until the cheese melts.
