Step 1
Preheat oven to 450°F.

Step 2
Wash tomatoes then place them on a large pan. Top with garlic and thyme then drizzle with olive oil.
Step 3
Roast 25 minutes then broil for a few more minutes.
Step 4
While the tomatoes are roasting, sauté onions in the butter until translucent, about 10 minutes. Add the tomatoes, garlic, basil, a few leaves of thyme and the broth. Bring to a boil.
Step 5
Lower the heat to a simmer and cook for 20 minutes.
Step 6
Blend with an immersion blender. Add in the heavy cream, salt and pepper and blend until smooth.
