Instructions
Prepare the Vegetables:
Step 1
Chop your tomatoes into quarters.
Step 2
Peel the onions and cut them in half from root to tip. Then, slice the onions. Mince your garlic.
Sauté Onion and Garlic:

In a large, heavy-bottomed soup pot, heat the butter and olive oil over low heat. Add the chopped onion. Sauté for about 15 minutes or until the onions are soft and slightly caramelized. You can also quickly saute them until they are soft and translucent if you don't want them caramelized.

Add the minced garlic and saute until fragrant (about 45 seconds).
Add Tomatoes and Seasoning:

Turn the heat up to medium high and add the chopped tomatoes to the pot along with your choice of broth, black pepper, onion powder, garlic powder, dried basil, red chili flakes and sugar. Stir to combine, and let the mixture cook for about 10-15 minutes uncovered, or until the tomatoes start to break down and release their juices.
Simmer:

Reduce the heat, cover, and let the soup simmer for about 20-30 minutes, allowing the flavors to meld and the tomatoes to become very soft.
Blend the soup:

After simmering, use an immersion blender or a regular blender to puree the soup until smooth. Be cautious when blending hot liquids; if using a regular blender, work in batches.

If your soup is too thick, add more broth. If your soup is too thin, simmer the soup for longer uncovered which will encourage evaporation, thickening your soup.
Creamy Option:

If you want a creamy tomato soup, add the heavy cream to the pot and stir until well combined. Simmer for an additional 5 minutes.
Season and Serve:

Taste the soup and adjust the seasoning with salt and pepper as needed. If your soup tastes a bit acidic, add some sugar and simmer for a few more minutes. You can also add more heavy cream to counter the acidicity.

Serve hot, garnished with fresh basil leaves, a drizzle of heavy cream and a sprinkle of grated Parmesan cheese, if desired.
