The Perfect Tomato Soup đ
Grilles cheese recipe is in my last post!
Recipe:
- 6 tomatoes chopped
- 1 red pell pepper chopped
- 4 tbsp unsalted butter
- Generous amount of olive oil
- 1 onion minced
- 10 -20 cloves of minced garlic (in my opinion the more garlic the better - but if you donât want to use a handful, stick to 10 cloves)
- 1 can tomato paste
- 2 tbsp freshly chopped basil
- 2 cups chicken broth (and another 1/2 cup if youâd like it to be less thick )
- 2 tbsp brown sugar
- 1/2 tbsp salt
- 1 tbsp oregano
- 1 tsp dried basil
- 1/2 tbsp black pepper
- 1/2 tsp white pepper
- 1 tsp onion powder (optional)
- 1 tsp garlic powder (optional)
- Cayenne to taste
- 2 cups heavy cream
Instructions:
- Wash and chop your tomatoes and bell pepper. Add to a baking sheet and put in the oven at 425°f for 20 minutes. After 20 minutes, switch the oven to broil until your tomatoes have a nice char
- In a large pot melt down your butter and olive oil, then sauté your minced onion for 2 minutes. After 2 minutes, add in your minced garlic and sauté for another 2-3 minutes. Then go ahead and add in your tomato paste and basil - sauté for another 2-3 minutes
- Now add in your roasted tomatoes and bell pepper, mix everything together well - Then add in your chicken broth
- Next, you want to throw in all of your seasonings! Give your soup a taste and see if youâd like to add more of any seasoning:) remember cooking isnât a strict science - make it taste how youâd like it to taste!
- Stir in your seasonings well, then add in your heavy cream and stir everything together one more time
- Grab your immersion blender and blend tour soup until smooth! If you donât have an immersion blender - allow you soup to cool & add it to your regular blender to make it nice and smooth
- Add back to your pop and simmer for another 5 minutes
- Plate your soup however youâd like, I drizzled some more heavy cream on mine and added basil leaves
