Kabsa (Chicken and Rice)

This is a typical Saudi Arabian 'comfort food' dish! It's takes a little time to prepare, but definitely worth it! Don't forget to add your favorite hot sauce to give it a little kick!

Ingredients
8 servings
¼ cupbutter
or margarina
3 lbschicken
cut into 8-10 pieces
1onion
large, finely chopped
6garlic cloves
minced
¼ cuptomato puree
14 ounceschopped tomatoes
canned, undrained OR 4-5 fresh tomatoes, chopped
3carrots
medium, grated
2whole cloves
5saffron sprigs
2 tspground cumin
½ tspground cinnamon
1 pinchnutmeg
1 tspcilantro
salt
to taste
pepper
to taste
1 Literchicken stock
caldo de pollo
2 ½ cupsbasmati rice
don't rinse or soak this
½ cupraisins
Instructions
Step 1
Melt magarina in a large stock pot, casserole or dutch oven.
Step 2
Add chicken pieces, onion, and garlic and saute until onion is tender.
Step 3
Stir in tomato puree and simmer over a low heat for a couple of minutes.
Step 4
Add tomatoes, carrots, cloves, all the spices and salt and pepper. Cook for a couple of minutes.
Step 5
Add the chicken stock.
Step 6
Bring to a boil, then reduce heat and cover. Simmer over low heat for 20-30 minutes.
Step 7
Add rice to the pot and stir carefully. Re-cover and simmer for 30-35 minutes or until rice is tender.
Step 8
Add raisins for the last 10 minutes of cooking.
Step 9
Place on a large serving platter and serve with a fresh mixed salad.
Step 10
Have 'hot sauce' handy for any who want to turn up the heat on this dish.
