Vegan Sweet Potato Brownies (Refined Sugar and Oil free)

These decadent brownies are soft and fudgey, with the perfect balance of chocolate flavour, boasting a chocolate banana icing, without being too sweet.
The are refined sugar and oil free, and can easily be made gluten free by subbing the flour for a gluten free alternative.
Too tip, roast your sweet potato for 40 mins on 200c to caramelise the sugars and soften the pulp allowing for easy mashing and enhanced natural sweetness.
You can easily add mix ins and toppings to this recipe according to your tastes.

Ingredients

For the brownie base
½ cupoat flour
⅔ cupself raising flour
½ cupunsweetened cocoa powder
¼ cupunsweetened applesauce
6medjool dates
pitted and soaked
2sweet potatoes
medium, mashed
1 Tbspvanilla extract
1 Tbspbaking powder
¼ tspbaking soda
1 tspground cinnamon
¼ tspsalt
¼ cupmaple syrup
¼ cupsmooth peanut butter
natural, unsweetened, melted
For the “icing”
1banana
medium, mashed
1 Tbspalmond butter
2 Tbspvegan vanilla soya yoghurt
2 Tbspunsweetened cocoa powder
1 tspespresso powder
1 tspcornstarch
to thicken

Instructions
Step 1
Roast the sweet potatoes and allow to cook before peeling and mashing the pulp into a smooth paste, either by hand or with a good processor

Add in the rest of the wet ingredients and blend

Sift through all the dry ingredients to ensure there are no lumps and slowly fold these into the wet ingredients until Just combined, do not over mix
Baking dish
Step 4
Now scoop the batter into a parchment lined baking tray, and smooth out.
Don’t worry the batter is supposed to be a thick consistency, however if it’s too dry add a splash of plant milk.
Step 5
Place in the oven at 180c for 30-40 mins depending on the depth of your baking tray, or until a toothpick comes out clean.

Once baked remove from the oven and leave within the baking dish until fully cooled, don’t be tempted to cut or decorate the brownies too early or they will end up a gooey mess

Once the brownies have fully cooled you can ice and decorate the brownies and cut into 9 squares, or smaller if preferred.
