Instructions
Step 1
Preheat the oven to 200?C. Line a baking tray and a baking tin with baking paper.
Step 2
Poke holes in the sweet potato using a fork. Place it on the tray and bake it for 30 minutes until soft. (You could also steam it, but be careful it doesn't become too mushy.)
Step 3
Remove the skin and mash the sweet potato in a medium bowl using the back of a fork.
Step 4
Whisk the eggs and mix in with the sweet potato.
Step 5
Mix in the peanut butter and honey.
Step 6
Combine the oats, whey and coconut in a large bowl.
Step 7
Add the egg mixture and stir well.
Step 8
Melt 100g of the chocolate in a small bowl in the microwave (see page 88), and add to themix.
Step 9
Chop the remaining chocolate and mix it through the batter.
Step 10
Pour the batter into the lined tin. Bake in thepreheated oven for 12-15 minutes until cooked through. 11 Allow to cool before cutting into 12 bars.
