Sheet pan shrimp fajitas

Instructions

Step 1
Preheat oven to 375°
Step 2
Mix all the seasoning together. Toss the bell peppers and onion with 1 tablespoon olive oil and half of the seasoning. Spread in a single layer on a sheet pan (use 2 if needed). Bake 10 minutes.
Step 3
Meanwhile toss the shrimp with 1 tablespoon olive oil and the remaining seasoning. After 10 minutes add the shrimp in a single layer to the bell peppers sheet pan and bake another 10 minutes.
Step 4
Wrap the tortillas in foil and a couple of minutes before the sheet pans are done put the tortillas in the oven to warm them.
Step 5
Squeeze lime juice over the shrimp. Serve in tortillas with your favorite toppings such as avocado, lettuce, diced tomatoes.
