Mediterranean Vegetables w Seitan Slice

These Mediterranean vegetables are my favourite side dish for any and every meal. Mix it up with whatever veg and spices you have in the house. You can pair it with anything you want and it’ll taste amazing every time!
I love the flavour of hot smoked paprika with these veggies but any paprika seasoning is fine. Use olive if you don’t have garlic oil. You could add minced garlic, whole cloves or even an entire bulb to roast.
I try to incorporate as many superfoods into my diet as possible and for this recipe, rocket goes perfectly. The peppery aroma from the rocket really compliments the sweetness from the potatoes and caramelised onions. Then there’s a lovely savoury taste from the spices and garlic, so an overall explosion of flavours!

2sweet potatoes

½ tsphot smoked paprika
¼ tspcumin powder
1 tspdried oregano

Instructions
Step 1
Pre-heat oven to 190° (fan). Remove packaging for slices and place on a baking tray for later.

Step 2
Chop sweet potatoes, courgette and red onion into dices and place in a separate baking tray. Add oil, salt & pepper, paprika, cumin, oregano and mix well.

Step 3
Place slices and vegetable mix into the oven for 25mins. Once done, add rocket and garnish with chopped chives - enjoy!
