Step 1
1. Set oven Gas 5 / 180˚C.

2. Break chocolate into small pieces and place in a small bowl.

3. Microwave for 30 seconds, stir. Then continue to melt at 10 second intervals, stirring each time. It is so easy to burn chocolate in the microwave, please be careful. You can also use the hob.

4. Separate the eggs. Use 3 bowls to do this, one for the yolks, one for the whites and one to separate the eggs over. That way, if a yolk breaks to only discard one egg (though don’t actually throw it away, use it in a recipe or make scrambled egg).

5. Put all other ingredients in a mixing bowl, add the egg yolks and whisk with an electric mixer until creamy.
Step 6
6. Whisk the egg whites until they form soft peaks.
Step 7
Add the cream of tartar to the egg whites. Continue whisking until the egg white forms stiff peaks.
Step 8
7. Fold into the cake mixture carefully.
Step 9
8. Fold in melted chocolate.
Step 10
9. Divide equally between 2 cake tins. (One spoonful in one tin, one in the oven)

10. Bake in oven for 20-25 minutes.

11. Remove cakes from tins and leave to cool on a cooling rack.
