Instructions

Step 1
Heat oven to 180*C. Butter 3 ramekins, sprinkle with sugar to coat and shake out excess.
Step 2
In saucepan, stir together milk, sugar, flour and salt with whisk until smooth.
Step 3
Heat to boiling over medium heat, stirring constantly.
Step 4
Pour mixture into large bowl, stir in molasses, butter, pumpkin pie spice, ginger and vanilla.
Step 5
Cool for 15 minutes. Best in egg yolks one at a time with whisk.
Step 6
In medium bowl, beat egg whites and cream of tartar with electric mixer on high speed until stiff peaks form.
Step 7
Fold egg white mixture, one third at a time, into milk mixture until well blended.
Step 8
Spoon mixture into ramekins, leaving 3/4 inch space at the top of each.
Step 9
Bake 25 minutes or until puffed and set. Serve immediately.
