Instructions
Step 1
Preheat oven to 425F and line a baking sheet with foil.
Step 2
Place peppers on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Mix together to fully coat peppers. Place skin side down, leaving the open half facing upwards.
Step 3
Bake for 25-35 minutes, until pepper skins are golden brown.
Step 4
Take out of the oven and cover with more foil and cool completely.
Step 5
Once peppers are cool, peel off the golden brown skin (a thin paper-like layer) then chop into desired size pieces.
Step 6
Store in a glass jar and keep in the fridge.
Step 7
Enjoy on your favorite salads, sandwiches, or eat by themselves!
