Instructions
Step 1
Preheat the oven to 400° f. Mine a rimmed baking sheet with parchment paper.
Step 2
Peel the carrots and slice off the tops and bottoms. Cut the carrots in half length wise, then slice them in half crosswise and cut each piece lengthwise into thirds. Each carrot fry should be about 3 in long by half an inch thick.
Step 3
Place the carrots, olive oil, and salt on a line baking sheet. Toss to coat
Step 4
Bake for 30 minutes, flipping halfway through, until the fries are slightly wrinkled and browned. Remove from the oven and toss with the parsley.
