Instructions
Step 1
Peel potatoes. Cook in boiling, salted water until soft. Drain and shake over heat to remove all moisture. Mash well.

Soak bread in milk
Step 3
Chop onion fine and saute in butter or margarine for 5 minutes.
Step 4
Combine all ingredients in a large mixing bowl. Work the mixture until smooth and spongy. Shape into small balls using a wet spoon and the palm of the hand.
Step 5
Have 3 tablespoons fat melted in a heavy pan over moderate heat. Put in meatballs and brown evenly. Shake pan frequently to keep balls round as they are browned in fat in pan.
Step 6
Make gravy from fat in pan by blending in 3 tablespoons flour. Gradually stir in 2 cups beef bullion or water in which potatoes have been cooked. Add liquid slowly, blending it in. Cook, stirring constantly, until thickened and smooth. Season well. Pour over meat. Bake in moderate oven, 350 degrees, or simmer on top of range about 1 hour. Eight servings. Keep hot in chafing dish or in casserole.
