Sausage, Bean, New Potato and Tomato Traybake

A summer-style traybake which can easily be upscaled to feed a large crowd. Great served with a crisp side salad. Can also be made with chicken thighs instead of sausages.

Ingredients
6 servings
1 tablespoonolive oil
6sausages
large
750gnew potatoes
washed and scrubbed
750gcherry tomatoes
1 bulbgarlic
separated into cloves but not peeled
1red onion
peeled, halved and cut into wedges
1bell pepper
stalk and seeds removed, cut into chunks
fresh oregano
3 tablespoonsred wine vinegar
black pepper
to taste
150gfrozen edamame beans
Instructions
Step 1
Preheat the oven to 200 degrees C/Gas Mark 6.
Step 2
Once the oven is hot put the olive oil in a large oven tray in the oven for 5 minutes.
Step 3
Add the sausages to the tray and toss around in the hot oil. Put the tray containing the sausages in the oven for 10-15 minutes until the sausages are just starting to brown.
Step 4
While the sausages are cooking, parboil the potatoes in a pan of water for 10 minutes. Drain. The potatoes should not be completely cooked.
Step 5
Add the potatoes, tomatoes, garlic, onion, pepper and most of the oregano to the sausages in the tray. Add the red wine vinegar and black pepper and mix everything well. Return the tray to the oven.
Step 6
Cook for about 40 minutes until the sausages are brown and the potatoes are tender. Add the beans and stir. Return the tray to the oven for 5-7 minutes until the beans are hot.
Step 7
Garnish with the rest of the oregano and serve with a crisp side salad.
