softened
¼ cupoil
½ cupsugar
2 Tbsppowdered sugar
1egg
at room temp
1 Tbspcream
1 tspvanilla
2 â…“ cupflour
2 Tbspcornstarch
¼ tspsalt
¾ tspbaking powder
½ cupunsalted butter
softened on the colder side
1 cuppowdered sugar
2 Tbspcream
cold
1 ¼ tspcotton candy flavoring
pink gel food coloring
blue gel food coloring
pop rocks
cotton candy, or strawberry grape nerds
Instructions
Preheat oven to 350°F
Step 1
Line baking sheet with parchement paper; set aside.
Step 2
Cream butter, oil, sugar, & powdered sugar in lg. bowl.
Step 3
Add egg, vanilla, & cream to sugar-butter mixture; mix until combined.
Step 4
Add flour, salt, cornstarch, & baking powder; mix until combined, using lg. cookie scooper, scoop out 8 equally sized cookie balls. Place them on parchment-lined baking sheet.
Step 5
Bake (10-11 min.). Cool on baking sheet (10 min.) before transferring to a wire rack to cool fully.
Cotton Candy Buttercream
Step 6
Whip butter, powdered sugar, cream, & cotton candy flavoring until light & fluffy.
Step 7
Separate buttercream into 2 sm. bowls. Dye one with the pink gel food coloring, & the second one with blue. Transfer colors to lg. piping bag, making sure to put the blue color is on one side & the pink color on the other. Don't worry about frosting touching. Frost swirls around each cookie then decorate with cotton candy pop rocks or nerds.

You can store these cookies in an airtight container at room temp. (up to 4 days), as long as it’s not too hot where you are.
Step 9
You can also store cookies in fridge in airtight container (up to 7 days). Make sure to let cookies get back to room temp. before enjoying them to let buttercream soften again.
