Mixed Grain Salad

Ingredients
6 servings
1 cuppearl
barely

⅓ cupwhite quinoa
rinsed

400gcan lentils
rinsed

⅔ cupwalnut pieces

⅓ cuppepita and sunflower seed mix

½ cupfresh mint
chopped

½ cupfresh coriander
chopped

2green shallots
thinly sliced

75gpomegranate arils
Dressing
Instructions
Step 1
Bring a large saucepan of salted water to the boil. Add the pearl barley and cook for 20 minutes. Add the quinoa and cook for 15 minutes or until the barley and quinoa are tender. Drain and rinse under cold running water. Drain well. Transfer to a bowl. Add the lentils and stir to combine.
Step 2
To make the dressing, whisk the oil, lemon juice, sugar, coriander and cumin in a jug. Season. Stir in currants and set aside until required.
Step 3
Place the walnuts and seed mix in a small frying pan over high heat. Cook, stirring, for 4 minutes or until toasted. Set aside to cool slightly.
Step 4
Toss walnut mixture and dressing into the Barley mixture. Season. Toss in the mint, coriander and shallot. Arrange on a serving platter. Top with pomegranate and extra miny leaves and coriander. Serve.
