Homemade Ravioli

Instructions

Step 1
Start by making the Ravioli, measure 200g flour and place onto cleaned bench. Create a well and add the two eggs into the centre with a dash of Olive oil. Using a fork beat the eggs incorporatingthe flour until it can be kneaded by hand.
Step 2
Using a pasta machine we add the pasta dough into folding over and rolling back through until the paste becomes soft. Once ready make the pasta thin but not too thin that it may break.
Step 3
We want to avoid adding too much moisture into the Ravioli, Drain the ricotta cheese, shread parmesan and mozzarella add to a mixing bowl, add a dash of basil, oregano and parsley into the mix and mix until combined.
Step 4
Now making thin lasagna styled sheet we place spoon fulls of the cheese mixture onto the pasta evenly spacing it. Too much cheese and it wont seal properly, too little and its just pasta. fold over the pasta and using your hands shape the pasta down around our mixture, cut your raviolis to size and clamp with a fork.
Step 5
Once we have finished the raviolis we can begin on the sauce, onto the heat a large pot or pan add our tomato paste and bring to temp without burning it, add a dash of the herbs again mix till lightly fragrent. Pour in a bit of red wine and mix well. Either add the entire can of tomatoes into the pan and an extra 1/3 of water, mix well and bring to a low simmer and allow to cook whilst we prepare the raviolis.
Step 6
Prepare a pot of water to the boil, add a generous amount of salt, once to the boil add the raviolis and cook until al dente, drain and allow to cool slightly.
Step 7
Serve your portion of ravioli and add some of the sauce ontop, finish with a little more parmesan and enjoy.
