Instructions
Step 1
1. Preheat oven to 425 degrees F.
Step 2
2. Pat chicken thigh dry with a paper towel, and season with salt & pepper on both sides.
Step 3
3. Add butter to a pan and heat on medium.
Step 4
4. Add chicken to the pan, and cook for 1-2 minutes on each side.
Step 5
5. Add 1/2 the barbecue sauce to a casserole dish.
Step 6
6. Put chicken in the dish, and top with cheese, pineapple, the rest of the barbecue sauce, and more salt & pepper.
Step 7
7. Bake for 20 minutes, then broil for 2-3 more minutes.
Step 8
8. Serve on top of a bowl of spinach, add on more bbq sauce and pineapple from the casserole dish (that wasn’t on top the chicken).
Step 9
9. No chicken? Use tofu. No dairy? Use dairy-free cheese.
