Instructions
Step 1
Begin with peeling the potatoes and putting onto boil. Let them simmer for 4-5 minutes and then drain. Leave them to steam until dry.
Step 2
Using a cheese grater, grate the potatoes. Add to a mixing bowl, crack in 1 egg and add the cornstarch. Season with salt and pepper and combine well.
Step 3
Shape into circular hash browns and place in the freezer for 45 minutes.
Step 4
Cook the bacon at 200c/390f until crispy.
Step 5
Remove the hash browns from the freezer and get a frying pan on a medium-high heat. Add 1/2 inch of oil and fry on both sides until golden brown and crisp.
Step 6
Fry the egg.
Step 7
Toast the bagel and butter.
Step 8
Assemble and enjoy!
