Ingredients
4 servings
1 poundsweet Italian sausage
bulk, or hot, or any link sausage, squeezed out of its casing
2 cupsonions
chopped
1 cupcarrots
sliced or diced
4 cupschicken broth
14.5 ounceItalian-style stewed tomatoes
can, chopped
1 x 8 ouncecan tomato sauce
1 cupsmafalda pasta
uncooked
2garlic cloves
minced
1 cupsliced mushrooms
fresh
2 cupsfresh spinach
thinly sliced ribbons
1 ½ cupsdiced mozzarella cheese
¼ cupParmesan cheese
grated or shredded, plus more for topping
¼ cupfresh basil
torn
1 cupfrozen Brussel sprouts
thawed and halved
Instructions
Step 1
Grease the interior of the slow cooker crock with butter or nonstick cooking spray
Step 2
If you have time, cook the sausage in a skillet over medium, breaking up sausage with a wooden spoon.
Step 3
Stir in the onions after the sausage is no longer pink
Step 4
Saute the onions until soft.
Step 5
Use a slotted spoon to transfer the meat and onions to the prepared crock.
Step 6
Discard the drippings.
Step 7
NOTE: If you don't have time, you can crumble the uncooked sausage straight int the crock.
Step 8
Stir in the onions, breaking up the meat with a wooden spoon.
Step 9
Add the carrots, chicken broth, chopped stewed tomatoes, and tomato sauce, stirring to combine.
Step 10
Cover.
Step 11
Cook on Low 4 to 5 hours.
Step 12
Stir in the uncooked pasta and garlic.
Step 13
Cover and continue cooking on Low 1 to 12 hours or until the pasta is tender but not mushy
Step 14
Stir in the mushrooms.
Step 15
Cover.
Step 16
Cook another 10 minutes on Low.
Step 17
Just before serving, stir in the sliced spinach.
Step 18
(No need to cook the spinach; the from the soup will wilt it.)
Step 19
To serve, divide the diced provolone or mozzarella cheese evenly into bowls and ladle the soup over the top.
Step 20
Top with the Parmesan cheese and torn fresh basil.
