light vanilla
3Granny Smith apples

1/2 cup unsweetened applesauce

Instructions

Step 1
Heat oven to 400°F (or 375°F for a dark, nonstick pan). Spray a 12-count muffin pan with nonstick cooking spray.

Step 2
Stir yogurt, apples, applesauce, pumpkin & egg whites in large bowl until well blended.
Step 3
Put dry ingredients (except the brown sugar) in another bowl and blend. Add dry ingredients to wet ingredients; stir until flour is just moistened.
Step 4
Fill muffin cups (they will be quite full) and sprinkle with brown sugar.
Step 5
Bake 35-40 minutes until done; a toothpick test will come out clean.
Step 6
Cool thoroughly; store leftovers in the refrigerator.
