Instructions
Step 1
In large stock pot, put chopped onion, bell pepper, parsley and garlic and saute in olive oil until onions are clear. In separate pan, melt butter and put frozen okra in. Sprinkle generous amount of Tony C on the okra. Stir frequently for at least 10 minutes, or until slime is cooked off and okra gets golden brown.
Step 2
In stock pot, add Rotel and chicken broth, stirring well. Add okra and bay leaves. Add pulled chicken and mix everything together. Add about 1T salt and another teaspoon of Tony C. Cover and simmer for 15 minutes.
Step 3
Slice sausage and cook in okra pot until sausage is well browned. Add to stock pot.
Step 4
Cook for another 15-30 minutes, and check the flavor for salt.
Step 5
In a small cup, put cornstarch in and add just enough water to liquify it. Add to stock pot and turn up heat to a high boil. Stir until gumbo begins to thicken (you can add more cornstarch if needed).
Step 6
Serve over rice.
