Instructions
Step 1
Place chicken thighs into base of mini slow cooker. Sprinkle pinch of salt/pepper over them.
Step 2
In med. bowl, whisk together sauce: honey, soy sauce, ketchup, olive oil, dried onions, garlic & red pepper flakes.
Step 3
Pour sauce over chicken thighs. Cover the slow cooker & cook on LOW (3-4 hr.) until tender.
Step 4
Remove chicken from slow cooker, place on cutting board, & cut into bite-sized pieces.
Step 5
In sm. bowl make slurry whisking cornstarch & water; pour slurry into sauce in slow cooker. Stir, cover, & cook (10 min. on HIGH). Stir chicken into sauce.
Step 6
Serve over rice; top with sesame seeds.
SINGLE SERVING OF RICE

½ cup water, ¼ tsp kosher salt, ½ Tbsp butter, ¼ cup white rice
Step 8
Bring water, salt, & butter to boil in sm. saucepan. Stir in rice. Reduce temp. to simmer (20 min.) until all water is absorbed.
