Step 1
Preheat oven to 425°
Step 2
Grate apple and carrot if using
Step 3
Add to all the dry ingredients and mix.
Step 4
Whip eggs and add other wet ingredients together.
Step 5
Add to dry mixture
Step 6
Mix only until dry streaks are gone. Lumps are okay.
Step 7
Fill sprayed muffin cups 3/4 full.
Step 8
Place in oven and bake for 5 min.
Step 9
When time is up, keep oven closed and turn temperature down to 350°.
Step 10
Bake for 10-12 more minutes.
Step 11
If using mini muffin tins they only need 10 min total.
