Instructions
Step 1
Heat 1 teaspoon of oil in a medium saucepan over medium-high heat. Add onion and season with salt and pepper. Cook, stirring occasionally, until starting to brown, 3 to 4 minutes.
Step 2
Add the quinoa and 1½ cups water to the saucepan and bring to a boil; reduce heat to low, cover, and simmer gently until almost all the water has evaporated, 10 to 12 minutes.
Step 3
Mix the broccoli and raisins into the quinoa, cover, and cook 8-10 minutes or until the quinoa and broccoli are tender.
Step 4
Remove from heat and mix in the almonds and scallions, using additional salt and pepper as desired
