Instructions

Step 1
Heat oven to 400F.
Step 2
Using your hands, mix all the ingredients in a mixing bowl until they come together in a ball. Sourdough starters an vary widely depending on what and when you feed them and what stage they are at, so you may find that you need to add a little more flour if the dough is too loose.
Step 3
Divide the dough into 3 equal pieces to make it easier to roll. Roll out 1 piece at a time between two sheets of baking paper until 2 mm thick, keeping the rest of the dough covered with a clean, damp tea towel to stop it drying out. Once you have rolled out the first piece, use a sharp knife to cut out leaf shapes, each measuring about 8x4cm.
Step 4
To decorate the leaves, score a line down the center of each leaf shape, taking care not to cut all the way through the dough and feather the edges by cutting small notches every few millimeters round the outside of the leaf. Using the tip of a sharp knife, make incisions in between the central line and the feathered edges to represent the veins. RE-roll any offcuts to cut out more crackers. Repeat with the rest of the dough pieces.
Step 5
Gently lift the crackers onto the lined baking sheets, grind over some salt, and bake for 10 minutes, until lightly golden and firm. Leave to cool and crisp up on the baking sheets.
