Soy-Marinated Steak in Peanut Satay Sauce with Crispy Broccoli

Beef and broccoli over rice is a tried & true Asian-inspired favorite. But to get it just right, you’ve got to hone in on more than just the beef or the broccoli—really, it’s all about the sauce, which can make or break the dish.

Instructions

Preheat oven to 400 F

Step 1
Adjust rack to middle position in oven. • Bring ¾ cup water & a pinch of salt to a boil in sm. pot.
Step 2
Toss broccoli, a drizzle of oil, & pinch of salt & pepper on baking sheet. Roast (15-20 min.) in oven until crisp. • Once water is boiling, add rice to pot; cover, lower heat, & reduce to gentle simmer. Cook (15 min.) until tender.
Step 3
In med. bowl, toss together beef, half of garlic, lime zest, 1T soy sauce, 2t sugar, & lg. drizzle oil. Season with salt & pepper.
Step 4
Heat drizzle of oil in lg. pan over low. Add scallion whites & remaining garlic. Cook (1 min.), tossing, until fragrant. Stir in peanut butter, 2T sugar, & 1t soy sauce. Slowly pour in ¼C water, stirring to combine. Remove pan from heat & stir in a squeeze of lime. Season with salt & pepper.
Step 5
Transfer sauce to sm. bowl; rinse & dry pan. In same pan, heat drizzle of oil over med.-high. Add beef; cook (3-4 min.), tossing, until browned & cooked [Cook beef in batches to avoid overcrowding & help get the best texture & flavor.]
Step 6
Divide rice between plates, top with broccoli & beef, & drizzle with sauce. Garnish with scallion greens. Serve with lime wedges for squeezing over & any remaining sauce on side for dipping.
