A simple white fish soup. Pollak is used in the original recipe, yet any white fish would do nicely.

Step 1
If necessary, defrost the pollock. Rinse the fish and cut into large pieces.
Step 2
Transfer the fish to a pot. Add a peeled whole onion, black pepper and laurel.
Step 3
Pour in the water and place the pot on the stove over high heat. When the water boils, remove the foam from the surface. Salt the broth and boil the fish for 15 minutes over low heat. Then remove the fish pieces, onion and laurel from the broth. Pour the broth into a different pot through a piece of clean cloth to remove residue.
Step 4
Peel the potatoes and cut into cubes or as you would normally would. Transfer the potatoes to the fish broth and boil over high heat. Reduce heat and let potatoes simmer until tender for about 10 minutes.
Step 5
Peel onions and carrots and cut into cubes. Heat a tablespoon of olive oil in a frying pan. Fry the onions and carrots in oil for about 3 minutes over high heat, then add pieces of fish taken out from the broth. Fry for another 1-2 minutes.
Step 6
When the potatoes are tender, try the broth for salt and put the pieces of pollock with onions and carrots into it. Bring the soup to a boil and simmer for about 5 minutes over low heat.
Step 7
Add parsley and fresh greens as needed. The soup is ready to be served!
