Use the leftover pork from Cilantro and Lime Roast Pork for this recipe and you’ll have dinner on the table in under 30 minutes. There seems a great number of ingredients in this recipe but don’t let that scare you off. The work is simple, the list is flavour building!

Instructions

Step 1
Combine hoisin, rice vinegar, garlic powder and fish sauce.
Step 2
Slice the pork and place in a sauté pan that has a tight fitting lid. Add the above sauce. Toss pork to coat. Cover and heat on medium-low while you prepare the other components.
Step 3
In a small saucepan heat vinegar, salt and sugar. When boiling, add the shredded carrots. Turn off the heat and let the carrots pickle quickly.
Step 4
Prepare the cabbage, radishes, cucumbers, cashews and sprigs of time.
Step 5
Combine mayo with sriracha sauce to create a spicy sauce.

Pull it all together

Step 6
Spread some sriracha mayo on each wrap, top with warm pork, pickled carrots, fresh veggies, cilantro, a squeeze of lime and some cashews.
Step 7
Tuck the sides in toward the middle and roll wraps up into tight little bundles of flavour
