Instructions
Step 1
Sauté onion, add green onion & spinach then parsley. Sauté for about 5min. Add salt, pepper to taste, sumac & lemon juice.
Step 2
In a large bowl, mix together eggs, Parmesan & feta.
Step 3
Now add spinach mix and combine well. This is your filling.
Step 4
Lay out a sheet of phyllo. Brush with butter and lay a second sheet of phyllo over it. Add filling along the long end and roll. I then roll it to create a spiral shape.
Step 5
Repeat with all the filling. Place in a lined oven tray. Brush the top with more melted butter. Sprinkle a little sumac & sesame seeds (optional).
Step 6
Bake at 200°C for about 20-30 min until golden & crispy.
