Greek Salad with Chicken

My go to order at a restaurant is normally a Greek Salad with Grilled Chicken, and the addition of roasted red peppers and artichokes makes it even better. This is super healthy, and tastes great with all the vegetables, meat, and feta. This also works well as a side without the meat too. 141gromaine lettuce

110gonion

180gtomatoes

14 ozcan artichokes
drained and rinsed

15.5 ozcan chickpeas
drained and rinsed

113gfeta cheese

½ cuppitted kalamata olives

Instructions
Step 1

Preheat your oven to 400F, and line a cookie sheet with parchment paper. Wash and cut your peppers into long, thin strips. Toss with oil and pepper. Roast at 400F for about 30 minutes, or until softened and lightly charred. Set aside



Step 2
Meanwhile, prepare the rest of the salad. Thinly slice your lettuce, and wash in a salad spinner. Cut your onion into a small dice. Wash your tomatoes, and cut into a medium dice



Step 3
Drain and rinse the can of artichokes and the can of chickpeas. Add to the salad


Step 4
Top the base with crumbled feta cheese and kalamata olives


Step 5
For the protein source, I'll be using leftover shredded chicken. I prefer to add the meat to the individual bowls instead of the entire salad. So take out a serving of salad, top with chicken, and any additional feta or olives if desired
