Peanut Streusel Pie
My great-grandmother's recipe. If you love peanut butter, this pie is for you!

Ingredients

Pie Filling
⅓ cpeanut butter creamy
¾ cuppowdered sugar
1 boxVanilla Pudding
cook and serve, the one that takes 3 cups of milk
pie shell
Baked, room temperature
Meringue
Instructions
Step 1
Blend peanut butter and powdered sugar until crumbly.
Step 2
Reserve ¼ c of the streusel for the top of the pie and evenly sprinkle the rest in the bottom of the baked pie shell.
Step 3
Cook pudding according to directions, cover with plastic wrap, and let cool until slightly above room temperature.
Step 4
Pour pudding on top of crumbly mixture in pie shell. Cover the surface of the pudding with plastic wrap and set aside.
Step 5
Beat egg whites until they form soft peaks; add cream of tartar or lemon juice. Mix sugar with corn starch. Gradually beat in sugar mixture until stiff and glossy.
Step 6
Pile meringue on top of the pudding and make it pretty! Don't make your peaks too tall or the streusel on top will burn.
Step 7
Sprinkle with remaining peanut butter/powdered sugar mixture.
Step 8
Bake in a 400 degree oven for 8-10 min or until meringue is delicately browned.
Step 9
Cool to room temperature and refrigerate overnight before serving.
