Instructions
Step 1
Mix the flour with 50ml of water, a pinch of sea salt and 1 tablespoon of olive oil, then knead until in comes together as a smooth dough (don't overwork it). Cover it and put it aside.
Step 2
Peel and finely slice the garlic. peel and finely matchstick the ginger. Finely chop the coriander stalks (reserving the leaves). Pile the prawns on top, then chop and mix it all into a rough paste.
Step 3
Divide into eight and shape into balls, then divide and shape the dough into eight dumplings.
Step 4
Snap the woody end off the asparagus then chop each stalk into three.
Step 5
Bring the stock to boil in a shallow pan. Plop in the dumplings, cover and simmer for 3 minutes.
Step 6
Add the prawn balls and simmer for 2 minutes, followed by the chopped asparagus for a final minute.
Step 7
Finely slice the chilli and scatter over with coriander leaves.
Step 8
Divide between bowls
