Instructions
Step 1
Combine all base ingredients until it becomes a wet-sand like texture. Spread evenly in a lined springform tray. Press firmly with the flat base of a glass and refrigerate for 20 minutes

Preheat oven to 250c

Whisk cream cheese until broken down and smooth. This will be easier when at room temperature.

To cream cheese add corn starch, maple syrup and vanilla. Mix together until it is all well incorporated. If using vanilla flavoured yogurt don’t add vanilla extract.

Add in yogurt and mix until just combined. Add the eggs and whisk until there are no more lumps.

Remove lined tray from fridge and pour in cheesecake batter. Bake for 15 minutes.
Crumble

Combine oats and flour in a medium bowl. Set aside.
Step 8
Peel, wash and thinly slice apples.
Step 9
Coat apples in brown sugar and cinnamon. This can be done easily by adding all ingredients to a large ziplock bag and shaking it together.
Step 10
Add butter and water to a medium saucepan over medium heat. Add apples and cook for 8-10 minutes or until the apple slices are tender.
Step 11
Remove cheesecake from oven. Top with apple slices and crumble. Bake for another 5 minutes.
Step 12
Remove cheesecake from oven and place in refrigerator for 3 hours. I recommend keeping it in the pan until completely cooled.
Caramel sauce
Step 13
Melt together coconut oil, almond butter and maple syrup. Whisk until combined and completely smooth.
Step 14
When serving, drizzle sauce over top
