Italian Pastry Cream Filling
Instructions
Step 1
Preheat oven to 350 degrees and line two baking sheets with parchment paper
Step 2
In a large bowl, sift flour and baking powder
Step 3
In another large bowl whisk eggs and sugar until combined and fluffy. Whisk in milk,melted butter, vanilla paste and lemon zest until well combined.
Step 4
Gradually add the flour into the wet ingredients and mix until incorporated and a soft dough is formed

Form the dough into 30g balls each. Place on cookie sheet and slightly press on top with a rubber spatula. Leave a 1 inch space.
Step 6
Bake one tray at a time for 10-11 minutes. The cookies should stay pale and golden on the bottom.
Step 7
While still warm make little holes with a knife or a spoon

Pipe filling in cookies and close together

In a small medium bowl pour apple juice and coloring. In another small bowl place sugar. (You can also brush on the coloring). After filling let the cookies sit for a minute and roll in sugar.

Add leaf and place in the fridge for two hours.
Italian Pastry Cream
Step 11
Place 1 3/4 cup milk,vanilla and lemon rind in a saucepan. Heat over medium until just before the simmering point. Don’t boil. Stir in sugar and set aside.

In a bowl whisk egg yolks,flour,cornstarch, and salt until smooth. Whisk in remaining 1/4 cup of milk.
Step 13
Remove lemon rind and vanilla bean from milk
Step 14
Slowly pour hot milk onto egg yolk mixture. Whisk constantly
Step 15
Place mixture back into the saucepan and place over medium heat.
Step 16
Whisk constantly until the mixture come to a boil and thickens. Summer for one minute to cook the flour.
Step 17
If using butter, whisk into hot pastry cream until melted and mixed thoroughly.
Step 18
Chill until thoroughly cooled
Step 19
Stir before using until smooth
