Instructions
Step 1
Preheat oven to 140C.
Step 2
Mix the paprika, sugar, garlic and thyme leaves together with a drizzle of olive oil to form a paste. Massage it all over the pork. Season with the salt and pepper.
Step 3
Place the onions in a large oven dish to serve as place for the pork to rest on for the fat to drain away. Place the pork on top of the onions, fat side up.
Step 4
Roast for 1 hour then loosely cover with foil and cook for a further 6 hours or until the meat is really tender and falling off the bone. If the rind and fat is a bit soft, increase the oven temperature to 200C and cook for 20 -30 minutes until crisp and golden.
Step 5
Meanwhile make the chipotle mayonnaise by combining all the ingredients in a bowl and season with salt and pepper.
Step 6
Allow the pork to rest for up to an hour before pulling apart in chunks.
