Asian Edamame Salad with Ginger Dressing

This is a delicious salad which is great served at a gathering, BBQ or as a side salad to other dishes. This ginger dressing certainly gives it a kick! Add the dressing at the last minute so the edamame maintain their crunch.

Ingredients
4 servings
200gfrozen edamame
0.5red onion
peeled and diced
75gcucumber
diced
1red pepper
diced
70gcarrot
peeled and grated
10gcoriander
chopped finely
Dressing
Instructions
Step 1
Place the edamame in a saucepan of boiling water and bring back to the boil, cover and simmer for 7 minutes. Drain and set aside to cool in a large bowl.
Step 2
Meanwhile, to make the dressing, place all ingredients in a jug and stir well.
Step 3
Add the onion, cucumber, red pepper, carrots and coriander to the edamame beans and combine.
Step 4
Stir in the ginger dressing and enjoy.
