Ingredients: 1 eggplant; 1 zucchini, green; 1 yellow squash; 1 red pepper; 1 orange pepper; Olive oil; Salt and pepper; 1/3 cup olive oil; 1 tablespoon balsamic vinegar; Pinch of sugar; 1 teaspoon coarse salt; A couple fo twists of fresh pepper; 1 garlic clove, crushed; 1 1/2 cup couscous; 2 cups boiling water; 2 teaspoon coarse salt; A twist or two of fresh ground pepper; 3 tablespoons chopped flat leaf parsley

Instructions

f you don’t mind standing for a while by the grill you will be rewarded with a beautiful platter of grilled vegetables that you can then serve with couscous for a lovely mediterranean style dinner on the patio. Once grilled, drizzle the veggies with the dressing and pile on top or alongside the couscous with a little more dressing on the side. You can serve this warm or at room temperature.
