Ingredients
4 servings

1 ¼ cupflour

1 cupcanola oil

chicken stock

3 Tbspchicken bouillon powder
or 2 bouillon cubes

3 Tbspfresh garlic
chopped

1 Tbspsmoked paprika

1 tspcoarse black pepper

1 tsporegano

1 tspthyme

1 tspcayenne pepper

2 cupsbell peppers
diced

2 cupsonions
diced

1 cupcelery
diced

1 lbboneless skinless chicken thighs
cubed

1 lbspicy Italian sausage
w/o casing

1 quartwhite rice
cooked

¼ cupscallions
chopped, garnish
Instructions
Step 1
On medium heat in large stock pot, stir &brown flour and oil to create a roux, until cocoa brown in color (about 5-7 minutes stirring constantly).
Step 2
Stir in sausage and chicken being careful not to break up sausage into very small or shredded pieces
Step 3
Add onions garlic, celery, peppers and spices to pot and sauté until the vegetables are slightly browned.
Step 4
Add water and bouillon powder to pot stirring constantly and cooking on medium low heat for about 10 minutes.
Step 5
Turn off heat and let rest for about 5-10 minutes. Stir, garnish with scallions and serve over rice or with corn muffin
